Ingredients:
o 1 cup water
o 1 cup Demerara sugar
(see note)
o 2-3 cinnamon sticks (3 inch)
Method:
1. Combine water and sugar
in a saucepan bring to a boil.
2. Reduce heat and simmer
until sugar is dissolved.
3. Add cinnamon sticks,
cover, and simmer for 10 to 15
minutes.
4. Cool and double strain into
an airtight container and
discard solids.
5. Seal well and refrigerate.
NOTE: Brown sugar is also an
option however, the cinnamon
can get lost behind the taste of
the darker sugar, so we suggest
you begin with an equal parts
brown and demerara sugars.
