Ingredients:
o 1 to 1 ½ lbs. key limes
o 1 1/3 cup sugar
o 2/3 cup water
Method:
1. Squeeze enough limes to
yield approximately 2/3 cup
lime juice.
2. Dice the rind of 3 juiced
limes and combine rind, water,
and sugar in a saucepan.
3. Bring to a boil stirring to
dissolve sugar.
4. Reduce heat, add juice,
and simmer uncovered stirring
occasionally until mixture
reaches a syrup-like
consistency.
5. Remove from heat and let
cool.
6. Strain into an airtight
container discarding solids.
7. Seal well and refrigerate.
