Lemon Squash

Ingredients:

o ½ cup plus 2 tablespoons

sugar

o 1 cup water

o ½ cup fresh lemon juice

(4-5 lemons)


Method:

1. Dice the rind of three of

the juiced lemons and

combine with water and sugar

in a saucepan.

2. Bring to a boil stirring to

dissolve sugar.

3. Reduce heat, add juice and

simmer uncovered stirring

occasionally until mixture

reaches a syrup-like

consistency.

4. Remove from heat.

5. Let cool and strain into an

airtight container discarding

the solids.

6. Seal well and refrigerate.
