Ingredients:
o 6-8 fresh ripe limes
o sugar
Method:
1. Wash limes in warm water
and let dry.
2. Peel limes with a vegetable
peeler avoiding as much of the
white pith as possible (A peeler
with serrated cutting surfaces
works well for this).
3. Julienne the peels and juice
the limes.
4. In a glass container lightly
muddle the julienned peels.
5. Add the lime juice and an
equal amount of sugar stirring
to dissolve the sugar.
6. Seal well and refrigerate
for 24 hours.
7. Double strain into an
airtight container discarding
the solids
8. Seal well and refrigerate
for at least 24 more hours
before using.
