Ingredients:
o If making Mango Infused
Spirits (see Infusions) use the
remaining peel and the unused
flesh of the 2-3 ripe mangos.
o ¾ cup sugar
o 1 ½ cup water
Method:
1. Combine sugar and water
in a saucepan and bring to a
boil stirring to dissolve sugar.
2. Reduce heat, add mango
and simmer stirring until the
mixture takes on a syrup-like
consistency.
3. Remove from heat and let
cool.
4. Fine strain into an airtight
container discarding the
solids.
5. Seal well and refrigerate.
