Pear Brûlée Cocktail

Ingredients:

Cocktail

o sliced pear

o 3 ounces Mount Gay XO

rum

o ¾ ounce Cinnamon Thyme

Syrup (see: Syrups etc.)

o ¾ ounce Pear Syrup

(see: Syrups etc.)

o ½ ounce fresh lemon juice

Garnish

o 2 pear slices


Method:

1. Cover pear slices with

sugar then using a torch, melt

the sugar until it is golden and

bubbly.

2. Shake remaining cocktail

ingredients over ice to chill.

3. Serve up in a cocktail glass.

4. Garnish with Brûléed pear

slices.


Comments:

This cocktail is crazy sweet but

in a good way. It requires some

effort, but it is easier than

baking a pear tart and there’s

no crumbs.
