Ingredients:
o pears
o water
o sugar
Method:
1. Dice any number of ripe
pears you wish and cover them
with water in a saucepan.
2. Bring to a boil stirring
occasionally until pears are
soft.
3. Take off heat and mash
pears.
4. Place mashed pears into a
cheesecloth lined sieve and
suspend over a saucepan
overnight.
5. Wring cheesecloth to
extract remaining juice.
6. Add 2/3 cup sugar for
every 1 cup of pear juice and
bring to a boil.
7. Reduce heat and simmer
stirring until mixture reaches a
syrup-like consistency and
remove from heat.
8. When cool, fine strain into
an airtight container.
9. Seal well and refrigerate.
Alternatively, you can make
the following:
Autumn Spice Pear Syrup
1. Add 2 cinnamon sticks and
2 whole cloves during Step 6.
above.
Ginger Spice Pear Syrup
1. Add 1 teaspoon crushed
fresh ginger during Step 6.
above.
Star Anise Spiced Pear Syrup
1. Add 3 star anise and 2
cardamom pods during Step 6
above.
