Rum-Spiked Coconut Coffee

Ingredients:

Cocktail

o 1 ½ ounces Mount Gay XO

rum

o 4 ounces cold strong coffee

or 1 double espresso

o 2 ounces coconut milk

Garnish

o whipped cream

o shredded coconut


Method:

1. Lightly toast shredded

coconut.

2. Shake remaining cocktail

ingredients over ice.

3. Serve up in glass mug or

large cocktail glass.

4. Top with whipped cream.

5. Garnish with toasted

coconut.


Comments:

Yes a little unusual. And

perhaps a little effort is

required. That said, there are

warm summer afternoons and

evenings calling out for this

cocktail. Can you hear them?
